Meatless Mondays are totally a thing, and I am here for it!
But switching it up once and a while with a vegetarian dish doesn’t have to be difficult, time-consuming, or costly. In fact, I bet there are a few meatless dishes that you already enjoy (spinach lasagna, anyone?).
I am certainly no chef, just a home cook who has been serving up vegetarian dishes for over 10 years now. However, I do have 3 picky taste-testers — you know, my kids — and they think I’m doing great. And if I can get them to willingly eat Brussels sprouts, then it must be tasty.
